  15. 1 tbsp Poppy Seeds
  16. 1 tbsp Melon Seeds
  17. 1 tbsp Whole Cashews: Optional
  18. 8-10 Whole Black Peppercorns
  19. 2 tbsps Ghee
  20. 2 tbsps Coconut Oil
  21. 2 tbsps (2 G) Paste: Each- 1 tbsp
  22. 1 Onion: Finely Chopped
  23. 1/2 tsp Turmeric Powder
  24. 1/2 tsp Red Chilli Powder
  25. To Taste Salt
  26. For Cooking the Mutton:
  27. 2-3 tbsp This Freshly Ground Garam Masala (This can be stored in an airtight container & refrigerated over a month & can also be used in the Veg. Curry Dishes too
  28. 500-600 gms Mutton: Tender Goat Meat, on Bones
  29. To Taste Salt
  30. 1/2-3/4 Cup Plain Yoghurt: Optional- I’ve used it to mellow down the extreme spiciness of the entire thing, however it’s not used traditionally
  31. 1/8 tsp or To Taste Sugar: Optional- Recommended though
  32. 1 Cup Onion-Coconut Paste
  33. 1 L Water (Hot): For the Gravy or As Required
  34. For the Onion-Coconut Paste:
  35. 1/2 of a Freshly Grated Coconut & 2 Onions- Finely Chopped- Fry them until dark golden brown- Cool down completely & then, blend it to a nice smooth paste

Steps to make to make Karwari Mutton Gassi: Karnataka Special

  1. Firstly: Clean & Wash well the Mutton pieces & marinate well simply with some salt, turmeric powder, red chilli powder & the plain curd- Coat the Mutton pieces well enough in this marinade & cover it & rest aside for at least 4-6 hrs time (overnight is best)
  2. Get the rest other ingredients aforesaid & in their measured quantities- well prepared, blended/grounded & finely chopped & set aside for later use

  8. Now, Heat up a Pressure Pan/Cooker, over the medium-high flame and add in the ghee & coconut oil together & let it turn aromatic & then, add into the chopped onions- sauté, until translucent
  9. Add in the 2G Paste & sauté until the raw smell goes off & it all turns golden brown at this point- Now, goes in the Freshly prepared special Karwari Gassi- Garam Masala Powder & mix everything well together until nicely combined and well blended
  10. Cook it for a good 6-10 mins time until the oil surfaces upto the pan- Drop in the marinated mutton to it & mix everything well together again & sauté everything well enough, altogether on the high flame now for at least another good 10-15 mins time
  11. The mutton would release its water organically, keep a close check on it while stirring continuously almost, ensuring that it doesn’t stick to the bottom of the pan- Add some splashes of hot water in between as we don’t want our gravy Masalas to get burnt & taste bitter
  12. At this point & after this much time of cooking- Not only your own house but also your neighbor-hood will start getting its immensely irresistible delectable aroma- Now, is the good time to add in the already prepared Onion-Coconut Paste to it & give everything a really good mix until nicely combined & well incorporated
  13. Let it cook on the medium flame for another 5-6 mins time until it all dries up almost & the oil surfaces upto the pan- Add in the measured aforesaid hot water to it- Mix everything well together again, with gentle hands and put on the lid of the pressure cooker/pan & allow it to whistle once on the high flame & reduce the flame to the low-medium

Let cook in the low-medium flame & get another 4-5 whistles done in this mode- The mutton will be absolutely well cooked- Let the cooker depressurise on its own & our wait is over now- The most delectable Karwari Mutton Gassi is ready to be served now with piping hot steamed rice or Pulao or even any Indian Breads of your choice
